
Almost everything strange about smell follows from two facts: it is chemistry rather than physics, and it takes an unusually direct route into the brain. Here are twelve consequences.
1. It Takes a Shorter Route Into the Brain

Olfactory signals reach the regions handling memory and emotion with fewer intermediate steps than input from the other senses, which is the standard account of why scent-triggered memory is so immediate and so emotional.
The recognition frequently arrives after the feeling. The direct route is the anatomical fact behind every story about a smell returning somebody to childhood.

2. You Stop Smelling Things Within Minutes

Olfactory receptors adapt rapidly, so a continuous smell becomes undetectable in a very short time, which is why you cannot smell your own home and everybody else can.
It is not that the smell has gone. Rapid adaptation is the property that makes your own environment invisible to you.
3. The Same Molecule Smells Different at Different Strengths

A number of compounds are pleasant and floral when very dilute and thoroughly unpleasant when concentrated, which means the identity of a smell depends on quantity.
Perfumery uses several such compounds deliberately at low concentration. Concentration dependence is the property that makes a smell two different things.
4. Mirror-Image Molecules Smell Nothing Alike

Some molecules exist in two forms identical except that one is the mirror image of the other, and those two forms can smell completely different – one of caraway and one of spearmint, in the classic example.
The receptor is detecting shape at a level that distinguishes handedness. Mirror-image discrimination is the property that shows how physical the sense is.
5. Most of What You Call Taste Is Smell

The tongue detects a small number of qualities. Almost everything else identified as flavour is aroma reaching the olfactory system from inside the mouth, which is why food is bland when your nose is blocked.
Holding your nose while eating demonstrates it immediately. Retronasal olfaction is the reason the sense of taste is mostly not taste.
6. Nobody Smells Quite the Same Things

Genetic variation means people carry different sets of functional receptors, so a compound obvious to one person can be undetectable to another – and neither is imagining anything.
Certain foods and flowers are the well-known examples. Perceptual variation is the reason arguments about smells cannot be settled.
7. What Smells Good Is Learned

With very few exceptions, whether a scent is pleasant is acquired through association rather than built in, which is why the same smell is prized in one culture and disliked in another.
A food smell you grew up with is pleasant because you grew up with it. Learned association is the fact that makes scent preference cultural rather than universal.
8. Almost Nothing Natural Is One Compound

A rose, a coffee, a forest floor – each is a mixture of dozens or hundreds of volatile compounds in specific proportions, which is why single-molecule imitations rarely convince.
Removing one component can change the whole impression. Compound mixtures are the reason natural smells are so hard to reproduce.
9. Perfume Is Built to Reveal Itself Over Time

Components evaporate at different rates, so a constructed scent is designed in layers – the volatile parts arriving first and the heavy ones persisting for hours.
What you smell on the paper is not what you smell four hours later. Layered construction is the technique that makes perfume a sequence rather than a smell.
10. Fixatives Slow the Whole Thing Down

Certain heavy materials evaporate very slowly and hold lighter components with them, which is the only reason a scent lasts on skin rather than disappearing in twenty minutes.
They frequently contribute little smell of their own. Fixatives are the components doing structural work rather than aromatic work.
11. It Is Chemistry Rather Than Physics

Sight and hearing detect waves, which can be described by frequency and amplitude. Smell detects molecules, which have no equivalent single scale, and no agreed way of arranging them in order.
There is no smell equivalent of a colour wheel or a musical scale. The absence of a scale is why smell has no vocabulary of its own.
12. Which Is Why the Language Is Borrowed

Because there is no independent framework, smells are described by naming their source or by borrowing words from other senses – sharp, warm, heavy, bright, green.
Almost no language has an extensive dedicated smell vocabulary. Borrowed language is the consequence of a sense with no coordinate system.
Chemistry With a Direct Line In

Two facts account for everything here. Smell is molecular rather than wave-based, so it has no natural scale and no vocabulary; and it reaches memory and emotion by an unusually short route, so it arrives before recognition does.
The last two items explain something people find frustrating. It is truly difficult to describe a smell, and that is not a failure of vocabulary or attention – it is that the sense supplies no dimensions to describe it along. You can say a note is higher than another and a colour is bluer. There is no equivalent sentence available for a smell.
